We always use our own wine yeasts in the production of our organic wines. All wines are fully (organic) fermented and therefore dry. In addition, they have all undergone a spontaneous malolactic fermentation. We do not filter and / or clarify to preserve the taste. This may cause some deposits to form on the bottom of the bottle, this is normal. Our organic wines are lightly sulfurized to prevent oxidation. At the moment we are investigating the possibility of preventing oxidation in the bottle with wine-own yeasts. An exciting process of which we hope we can let you taste the result as soon as possible!
